Description:

Fast & easy! This Southwestern comfort dish goes really well with HILDAS PERUVIAN SALAD (posted elsewhere). Also, see note for Vegetarian Variations of this dish.

Ingredients:

3 - 5 cloves garlic – minced
1 large yellow onion – chopped
16 ounces green chiles *
1 tsp. ground cumin
1 tsp. chile or chipotle powder
½ tsp. oregano
½ tsp. salt
1 - 2 cans black beans – drained and rinsed
4 - 6 chicken breast halves or thighs (skinless & boneless) **
2 cups Monterey Jack cheese – shredded
* 1 container frozen diced green chiles (thawed), mild, medium or hot – or 1 jar green chile sauce (Santa Fe Olé is a brand I like).  Canned are acceptable, but not as flavorful.
** Or 4–6 fish fillets (any firm white fish) or slices of extra-firm tofu

Preparation:

Preheat oven to 375° & lightly grease a baking dish.

In a mixing bowl, combine garlic, onion, green chile, seasonings & mix well. Arrange beans in the bottom of a casserole and lay the chicken, fish, or tofu on top. Pour the sauce evenly over all. (If making ahead, cover & refrigerate until ready to bake.)

Bake chicken, uncovered, for 30 minutes (fish or tofu will take less time). Sprinkle with shredded cheese and bake an additional 5 minutes, or until the cheese is melted.

Serve with heated flour tortillas, rice (if desired), and Hildas Peruvian Salad.
