2 dozen large fresh mushrooms ½ cup diced onion 1 tablespoon olive oil 4 tablespoons ricotta or pot cheese 2 tablespoons Italian bread crumbs |

Wash and dry the mushrooms. Remove the stems and chop them fine, reserve the caps. Sauté the stems and onions in oil then combine with cheese and bread crumbs. Stuff the mushroom caps and bake in oven, 425° for 10-12 minutes.
