M.J. Colleran, a dear family friend, from Scranton, gave us this recipe for a fabulous appetizer. Everyone seems to love hot artichoke and this is such a great twist on it.

| Ingredients: | ||||||||||||||||||||||||||
|
2 jars marinated artichoke hearts 4 eggs beaten 1/8 teaspoon salt 1 small onion chopped ¼ cup fine dry bread crumbs 1 clove minced garlic ½ teaspoon oregano ½ teaspoon Tabasco sauce ¼ teaspoon pepper ½ pound cheddar cheese, grated 2 tablespoons minced parsley |

Drain oil from artichokes into frying pan. Sauté onion and garlic in oil. Chop artichokes and combine with all other ingredients. Pour into 7”x11” glass baking dish. Bake at 325° for 30 minutes. Drain and allow to cool slightly before cutting into 1” squares. May be reheated.
