Grilled Garden Vegetable Sandwich |

1 medium zucchini or yellow summer squash 1 medium red or green sweet pepper 1 small onion 2 medium eggplant Non-stick spray coating 1 (8 oz.) focaccia round, split horizontally, or 1 loaf French bread, split lengthwise and toasted, if desired Garlic Mayonnaise Dried Tomatoes (optional) 2 oz. Monterrey Jack, cheddar or Swiss cheese, sliced |

Cut vegetables into 3" thick slices. Spray vegetables lightly on each side with spray coating to keep them from sticking to grill. Grill on charcoal or gas grill directly over medium heat for 5-10 minutes, until tender, turning once. Spread bread with Garlic Mayonnaise. Layer vegetables and dried tomatoes on bread. Top with cheese and second piece of bread. |
