Ingredients:

1 small box Whole Wheat Penne Pasta
1 orange pepper, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 onion, diced
2 cloves garlic, minced
10-12 small shelled and deveined shrimp
2 tablespoons olive oil
1 tablespoon butter substitute
2 large ripe tomatoes, chopped
3 large basil leaves, rolled up and sliced
Parmesan cheese, grated
black pepper to taste
salt to taste

Preparation:

Place 2 quarts of water on stove for boiling pasta.
In a large skillet peppers on medium heat for 4 minutes.
Meanwhile cook the penne according to the packages instructions.
Add onions and garlic to the peppers and sauté for 3 more minutes.
Add a pinch of salt.
Add shrimp and cook for 2 minutes.
Add tomatoes and cook for another 2 minutes or until the shrimp are opaque.
Drain cooked pasta and run under cold water to stop cooking.
Add butter and chopped basil to the sauce.
Salt and pepper to taste
Put the pasta in a nice low bowl and pour sauce over top.
Grate cheese over it and serve immediately.
