Black Bean Tortilla Dip

1 18 ounce can black beans
½ cup salsa
2 tablespoons lime juice (the juice of one lime)
¼ teaspoon ground cumin
½ tablespoon extra virgin olive oil
2 tablespoons chopped fresh cilantro
2 scallions finely sliced


Tomato, Basil, Mozzarella Skewers

16 small fresh mozzarella balls
16 fresh basil leaves
16 grape tomatoes
1 Lemon juiced
1 tablespoon Extra-virgin olive oil
Salt & pepper to taste


Black Bean Tortilla Dip

Rinse the black beans and place them in the food processor with the salsa, lime juice and cumin. Adding as little olive oil as needed, process until smooth.
Season with salt and pepper.
Sprinkle cilantro and scallions on top as a garnish.
Serve with baked tortilla chips.


Tomato, Basil, Mozzarella Skewers

Thread 1 mozzarella, 1 basil and 1 tomato on small skewers. 
Combine lemon juice, olive oil, salt and pepper.
Drizzle skewers lightly with lemon/oil mixture.
