Summer Barley Salad

Ingredients:

1 1/4 cups pearl barley, rinsed
1/4 cup olive oil
3 tablespoons fresh lemon juice
4 ripe plum tomatoes, seeded & cut into 1/2" dice
1 cup cooked fresh corn kernels
1 cup hothouse cucumbers, peeled & cut into 1/2" dice
1/4 cup minced red onion
1/2 cup chopped flat leaf parsley
1/2 cup chopped mint leaves
Salt & pepper to taste

Preparation:

Bring barley to a boil in 8 cups salted water.  Reduce heat to medium and simmer 45 minutes, until tender.  Drain well and remove to a large bowl.

Toss warm barley with oil and lemon juice.  Cool to room temperature.  Add remaining ingredients and toss well.  Serve at room temperature.
