Carrageen is a small edible seaweed, named after Carragheen in County Waterford. Plants are washed in salt water and spread on the beach to dry and bleach. |

|
3/4 cup carrageen (Irish moss) |

| Preparation: | |||||||||||||||||||||||||||||
|
Soak moss in cold water for 5 minutes. Then tie moss in cheesecloth and put in top part of double boiler with milk and salt. Put over boiling water and cook, covered, for 30 minutes. Remove cheesecloth bag and add flavoring to milk mixture. Pour into bowl and chill until firm. |
