Nutty Rice Salad

4 cups warm rice
1 green or red bell pepper, stemmed & chopped
1 cup frozen peas, thawed
1 (6 1/2 oz.) can water packed tuna, drained
1/2 cup chopped toasted walnuts
1/2 cup chopped red onion
1/4 cup chopped parsley
1 teaspoon dried tarragon
2 tablespoons yogurt
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon freshly ground pepper
4 cups shredded iceberg lettuce


In large bowl, place rice, bell pepper, peas, tuna, walnuts, and red onion.  In a small bowl, combine yogurt, olive oil, lemon juice, herbs, salt, and pepper.  Pour dressing over ingredients in large bowl, and toss to combine.  Spread lettuce on platter and mound rice mixture over it.
