Description:

Whenever I return to Australia, my family gathers and expect me to cook. They always ask for something mexican, but with access to none of the spices (and knowing they really just want me to make them margaritas), I make them a big bowl of guacamole and we catch up over a pitcher of margaritas. Its not high cuisine, but we love it.

Ingredients:

6 perfectly ripe avocados

1 jalapeno pepper, seeded and diced

1/2 red onion, finely diced

2 cloves of garlic, peeled and roughly chopped

1 teaspoon salt

1 ripe tomato, finely diced

1 fistful of cilantro, stems removed and chopped

juice 2 limes

tabasco sauce or cayenne powder

on hand: extra limes, jalapenos, salt

Preparation:

slice  the avocados in half and squeeze them into the bowl.

squeeze a little lime juice over them.

sprinkle the salt over the garlic (on a chopping board) and, using the wide end of your knife, grind the salt and garlic into a paste. Add to the avocado bowl.

add the onion, cilantro, tomato and diced jalapeno.

squeeze the rest of the lime juice into the bowl.

mash with a potato masher or fork. Do not overdo it!

taste: you can add tabasco or cayenne until you reach the right heat.

*you can also add a few grains of cumin. I think of cumin as the drag queen of spices; it waltzes into a dish and before you know it, she opens her mouth and theres this deep bellow; Im Here!

All the attention swings around to the cumin and the delicately arranged flavours all disppear into the background.

Your choice. Everyone loves a drag queen...
