I insist that one should always make margaritas by the pitcher, not by the glass. That being said, start squeezing those limes, because there is no mixer in the Mannix margarita! For those with a tamer limit, you can make them by the glass, the ratio is 2 parts tequila, 1 part triple sec, 1 part lime juice and 1/2 part simple syrup (or a splash of Roses Lime) |

750 ml bottle silver tequila |

simple syrup: you can buy this, but it takes no effort or time. Simply place 1 cup of sugar and 1 cup of water in a small saucepan. I add the zest of a lime in the pot to infuse a little. Heat enough to dissolve the sugar and let cool. If youre in a hurry, place the saucepan into a sink partially filled with cold water or ice. pour the tequila and triple sec into the pitcher. squeeze the limes into a measuring jug and keep squeezing until you hit the 350 ml mark. This may take up to 20 limes, depending upon their yield. Buy 2 dozen so that you have extra to serve. Add the lime to the pitcher. add about 100 ml of simple syrup, stir and taste. It will be strong, but the ice in the glass will sort that out. You need to gauge the sweet / tart trade off. wipe a wedge of lime around the rim of a glass and dip it into some salt (place some salt on a saucer, a nice flaked salt is a treat). add enough ice cubes to come 3/4 to the top of the glass. pour or ladle about 1 cup of margarita into the glass and serve with a wedge of lime and a big smile. You see, these are mighty fine margaritas and the reason that I am advising you to make a pitcher full is that there are 3 definite issues at hand: 1. you are going to want a second. 2. youre not going to want to squeeze all those limes again. 3. you really should have some company if youre going to get to the bottom of the pitcher.
