Ingredients:

2 medium onions
3 medium sweet potatoes
1 medium sized butternut squash
1 pound parsnips
2 pounds carrots
4 apples
1 cup orange juice
1/2 teaspoon dried coriander
1 teaspooon or more cinnamon
1/2 teaspoon ground cloves
water
1/2 cup prunes
1/2 cup dried pears
1/4 cup dried apricots

Preparation:

Peel and chop vegetables and apples. Combine orange juice and spices. Pour juice over vegetables in a big pot; add enough water to cover one third to one half the vegetables. Cook on top of the stove 40 minutes; add dried fruit and cook for 20 minutes more. Check pot frequently, adding water as needed. Mash slightly before serving.
