Memorable Mussels & Pasta

5 lbs. mussels, scrubbed & debearded
1/2 cup finely chopped scallions
1 tablespoon olive oil
1/4 cup finely chopped Italian parsley
3 tablespoons finely chopped fresh basil
1 tablespoon finely minced garlic (3 large cloves)
1/2 teaspoon or more red pepper flakes, to taste
1 tablespoon oregano
3/4 cup dry white wine
Salt & freshly ground black pepper to taste
1 (12 oz.) package fettucine, cooked & drained


Place mussels in a large pot. Add remaining ingredients, with the exception of the pasta. Cover pot tightly. Bring liquid to a boil, and cook mussels over high heat for 5-8 minutes.

Place hot, cooked pasta in a large, shallow serving bowl. Remove mussels from shells and arrange on pasta, using the liquid as sauce.
