Catfish With Many Herbs & Spices

Ingredients:

Spice Mixture
1 tablespoon fennel seeds
1 teaspoon freshly ground black pepper
3/4 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground thyme or 1/2 teaspoon dried thyme leaves

Herb Mixture
3 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh chives or minced scallion greens

Fish
1 tablespoon olive oil
2 teaspoons minced garlic
2 lbs. catfish fillets
2 tablespoons fresh lemon juice

Preparation:

Heat oven to 400 degrees F. In a small bowl, combine all ingredients for spice mixture. In another small bowl, combine all ingredients for herb mixture. In a baking dish large enough to hold fish in one layer, place oil & garlic. Sprinkle a spice mixture over garlic. Sprinkle a herb mixture over spice mixture.

Arrange fish on top of spices and herbs. Sprinkle fillets with lemon juice, then sprinkle remaining spice mixture over fillets, followed by remaining herb mixture.

Place dish in hot oven. Bake for 10 minutes. Turn heat up to broil and cook in oven about 1 minute longer.
