This is a very healthy and spicy chili. You can omit or increase the amount of meat.
4 1/4 lb. hamburgers made from ground round
4 large peppers, mixed colors, cut in quarters
1 large vidalia onion, thickly sliced
4 large carrots, split lengthwise
2 pounds roma tomatoes
one T olive oil
1 cup of beef (or vegetable) broth
1 cup of tomato or v8 juice
1 can dark red kidney beans with liquid
1 can black beans with liquid
1 jalapeno pepper, chopped (seeds optional)
1 t hot pepper sauce
1 t good chili powder
Sea salt and black pepper to taste
grill burgers until pink
Coat veggies with olive oil and grill. The tomatoes will cook quickly and the carrots will take longer than the peppers and onions.
Let burgers and veggies cool. Do not peel the peppers.
Chop the veggies and beef patties into small dice. Place in a large pot with the broth, juice,beans, the diced jalapeno, chili powder and the pepper sauce. Simmer for 30 minutes and salt and pepper to taste.
