Description:

Tasty, fun and easy recipe everyone will enjoy. We make these when we go camping, but you could do it on your grill at home!

Ingredients:

Chicken Kebab Ingredients:

1 red onion quartered lengthwise and halved crosswise

8 plums quartered lengthwise

1 ½ pounds skinless, boneless, chicken thighs, quartered

Wooden skewers, soaked in water

 

Chicken Marinade Ingredients:

½ cup vegetable oil

1/3 cup apricot jam

2 Tablespoons rice wine vinegar

1 ½ Tablespoons soy sauce

1 Tablespoon extra-virgin olive oil

 

Shrimp Kebab Ingredients:

2 Shallots diced

Salt

Pepper

2 TB Sesame oil

1 Lemon

1 TB Minced garlic

 ½ cup Soy sauce

Shrimp

Wooden skewers, soaked in water

 

Veggie Kebab Ingredients:

Red & Orange peppers

Mushrooms

Olive oil

Preparation:

Chicken Marinade Directions:

In a medium bowl, whisk together the olive oil, jam, vinegar and soy sauce. Add the chicken and toss to coat; refrigerate for at least 30 minutes – 4hrs – or overnight

Kebab Directions:

Transfer marinated chicken to a bowl
Pour left over marinade into a saucepan, boil for 2 minutes, then let cool
Thread chicken, plums and onions onto skewers
Grill kebabs turning occasionally and basting frequently with the marinade during the first few minutes, until chicken is cooked through.

 

Shrimp Marinade Directions:

Combine all ingredients in bowl, stir well. Put contents of bowl in a ziplock bag. Let sit for 1 hour.

Kebab Directions:

Take marinated shrimp and put onto skewer. Grill until cooked. Serve immediately.

 

Veggie Kebabs

Take mushrooms & peppers put onto skewers, brush with olive oil. Grill until cooked. Serve immediately.
