Chipotle Tequila Lime Shrimp with Fried Rice

I came up with this recipe when I was looking for a quick, easy and delicious meal with ingredients that I had on hand. This is what I came up with. My husband loved it so much I decided to share it with all of you. I hope you enjoy it! |

For the Shrimp: Juice of 1 Lime 1/4 cup oil 1/4 cup tequila 1/2 cup cilantro
1/2 tsp. salt
1 clove garlic 1 chipotle pepper with 1 tsp. adobo sauce 1 pound large, raw shrimp, shelled, deveined and tails off 1 T. butter For the Fried Rice: 4 cups cooked rice-cold 2 T oil 3 green onions, chopped 1/2 red bell pepper, chopped (Optional) 4 oz. fresh, sliced mushrooms 2 T. soy sauce (I like to use low sodium) 1/2 cup frozen peas 2 eggs, beaten |

For the shrimp: In a blender or food processor, add the lime juice, oil, cilantro, chipotle pepper with adobo, garlic, salt and tequila. Blend until well combined. In a large skillet melt butter and add shrimp stirring constantly about 1 minute. Next add the chipotle tequila lime mixture and continue cooking until shrimp are cooked through. Cover and keep warm For the fried rice: Heat oil in a large skillet. Add rice, green onion, bell pepper, mushrooms and peas. Stir fry over med-high heat about 3 minutes. Add soy sauce and continue to stir fry about one minute longer. Push aside the rice and add the egg, scrambling until cooked. Mix the egg into the rice mixture. Next add the shrimp, stirring until well incorporated. Serve with a garnish of cilantro if desired. |
