Shallot Mint Salsa

Ingredients:

10 shallots, peeled and thinly sliced
1 tablespoon fresh ginger, grated
1/4 cup fresh mint, minced
1/2 cup minced fresh pineapple
2 tablespoons pineapple juice
1 teaspoon minced Thai red chiles or 1 1/2 teaspoons minced red serranos
3/4 teaspoon sugar
1 teaspoon soy sauce
2 tablespoons unseasoned rice wine vinegar

Preparation:
Sauté shallots in water until browned, about 10 minutes. Cool. Mince all ingredients, and mix together. Mix all ingredients in glass or plastic bowl. Cover and let stand at least 1 hour before serving.
