Description:
This is such a traditional English dish for leftovers.  Cedric made us this recipe and we were so surprised when we enjoyed it so much.  However, there is no specific recipe when it comes to Bubble and Squeak!  The two traditional igregients are leftover potatoes and cabbage.  Any leftover vegetable or meat can be added.  The food will bubble up" when fried with high heat and will make a "squeaking" sound as it fries.
Ingredients:
1 medium sized onion
3/4 lb cold mashed potatoes
1 oz butter
asalt
freshly ground nutmet
4 rashers (thin slices) streaky bacon
1/4 lb cooked cabbage
black pepper
a little bacon fat
Preparation:
Finely chop onion and cook in fat until transparent.  Remove rind of bacon, chop and fry until cooked but not brown.  Add the mashed potatoes and warm through.  Push to one side, add butter to pan and when melted, add cabbage, pepper, salt and nutmeg.  When hotpile on top of potatoes, bacon and onion.  Spread and flatten out the mixture over the entire pan and allow the bottom to become crisp and brown.  When serving turn out so that it is crispy side up.
