Eggless Matzo Balls |

4 medium potatoes, peeled & chopped 4 cups or 1 quart water 1-1/4 cups matzo meal 1 teaspoon chopped fresh parsley or cilantro if desired Salt & pepper to taste |

Boil potatoes in water in large pot for 20 minutes till tender. Drain & mash in a bowl. Add matzo meal, salt & pepper. Knead dough till firm and smooth. (I add a spritz of seltzer to make them lighter) Fill a large pot 3/4th full with water. Bring to boil. Roll dough into small 2 ½ balls (keep your hands wet so dough doesnt stick) Carefully drop balls into boiling water. Cook for 20 minutes in a covered pot. Remove matzo balls with slated spoon and serve in vegetable soup. |
