2 cups cooked Quinoa 1 mango peeled, seeded and cubed 1 red pepper chopped 1 bunch scallions chopped 1 can black beans rinsed 1/2 cup cilantro chopped 1/2 cup flat leaf parsley chopped 1 whole lemon - juiced 1/2 teaspoon sea salt 1/4 teaspoon cayenne pepper 2 tablespoon Olive oil |

|
Prepare Quinoa according to package directions (usually 1 part quinoa to 2 parts liquid) I like vegetable broth. Rinse quinoa if necessary, combine with liquid and bring to boil. Reduce heat cover and simmer for 10-15 minutes. Fluff with a fork and let cool. |
