Description:

Vegetarian, wheat free, Gluten Free, High protein salad

Ingredients:

2   cups cooked Quinoa

1   mango peeled, seeded and cubed

1   red pepper chopped

1   bunch scallions chopped

1   can black beans rinsed

1/2  cup cilantro chopped

1/2  cup flat leaf parsley chopped

1   whole lemon - juiced

1/2  teaspoon sea salt

1/4  teaspoon cayenne pepper

2   tablespoon Olive oil

Preparation:

Prepare Quinoa according to package directions (usually 1 part quinoa to 2 parts  liquid)  I like vegetable broth.  Rinse quinoa if necessary, combine with liquid and  bring to boil. Reduce heat cover and simmer for 10-15 minutes. Fluff with a fork   and let cool.



In a separate bowl combine mango, black beans, scallions, and red pepper.  Add  salt, cayenne, lemon juice and olive oil, cooled cooked Quinoa, .  Toss together  and serve chilled or room temperature.

Thank you for making this! I didn't even know how to pronounce Quinoa so I was completely intimidated by it. And you made it look so easy that I am definitely going to make it for the summer. Plus it's good for you!
