Flounder with Caper-Basil Tartar Sauce |

1 lb flounder fillets 1/2 teaspoon lemon pepper 1/2 cup mayonnaise 1/2 teaspoon grated lemon peel 1 tablespoon lemon juice 2 tablespoon capers, drained, coarsely chopped 2 tablespoon thinly sliced fresh basil 1/4 teaspoon lemon pepper |

Preheat grill to medium (300°F to 350°F). Cut sheets of foil slightly larger than each fillet.* Cut 2- to 3 ½-inch slits in the center of each sheet. Coat foil with nonstick cooking spray. Sprinkle fillets evenly with 1/2 teaspoon lemon pepper; place on foil. Set aside. For sauce, in a small bowl combine mayonnaise, lemon peel, lemon juice, capers, basil and remaining lemon pepper; cover and refrigerate until serving. Place fish on grill. Grill, covered, 6 to 8 minutes (if using a grill basket, turn fillets after 3 to 4 minutes) or until thickest part of fish flakes easily with a fork. Carefully transfer fillets to a serving platter, and serve with sauce. |
