Almond Crusted Trout

Ingredients:
1/4 cup chopped almonds
2 tablespoons chopped fresh parsley
2 tablespoons chopped shallots
2 cloves garlic, minced
2 tablespoons Italian breadcrumbs
2 tablespoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 lb trout fillets (thawed, if frozen)
Fresh dill (optional)
Preparation:
Preheat grill to medium-high.

Process almonds, parsley, shallots and garlic in food-processor container. Stir in breadcrumbs, lemon juice, salt and pepper. Rub mixture over trout fillets.

Grill, skin side down, covered with grill lid, 6 to 8 minutes or until fish flakes with a fork. Garnish with fresh dill, if desired.
