Tricolored Crepes for Le Quatorze Juillet |

| Every year on the 14th of July, I make this tricolored crepe for my family in honor of French National Day, commemorating the storming of the infamous Bastille prison, popularly called Le Quatorze Jullet. It takes me back to my years in Paris, where there are parades, and fireworks and dancing in the street. I always celebrated it with my family here in the States, and our most vivid memories are our summers at Silvers Sands on Sebago Lake in Maine. I would make these tricolored crepes stuffed with blueberries and strawberries for a whole bunch of kids, including our twin girls. 1 cup all purpose flour 2/3 cup milk 2/3 cup cold water 3 large eggs 1/4 tsp. salt 6 Tbs. melted butter Filling: 3 qts of blueberries 3 qts of strawberries Toppings: pint of heavy whipping cream confectioners sugar pint of creme fraiche |

Measure the flour, then whisk in the milk and water to make a smooth blend. (Or you can do this in a blender instead of with a whisk). Whisk in the eggs, salt and 3 Tbs of the butter. Let rest for 10 minutes to an hour in the fridge. Heat the crepe pan until hot when you put your hand over it. And believe me its worth getting a crepe pan. Brush lightly with a paper towel dipped in the melted butter. Put 1/4 cup of batter in the center and then spread evenly. It should cover the surface. After 30 seconds. or when you see the sides coming away, it should be ready to turn. Cook it 15 to 20 seconds more. And its done. Keep cooking, as people will be eating as fast as you can make them. Stuff with the blueberries and strawberries and whatever choice of white topping they like: whipped cream or creme fraiche, or powdered sugar sifted over. Enjoy! |

I have a similar recipe for National Sweden Day. Michael worked a few summers in Sweden and our family has great memories of that wonderful country and its generous people. The crepe recipe is the same as above except for adding the zest of a lemon. The crepe is served with the whipped cream, blueberries and garnished with thin lemon slices for the national colors of blue and yellow. For a very quick recipe, Ikea sells a great swedish crepe mix which only needs water. :)
