Grilled Chicken Apple Caesar Salad |

1/3 cup bottled Lite Caesar salad dressing 2 tablespoons Dijon mustard 2 frozen boneless chicken breasts 4 cups bite-size pieces romaine lettuce 1 large red apple, sliced in half then into small pieces 1/4 cup grated Parmesan cheese 1/2 cup seasoned croutons 1/4 cup roasted almonds (optional) 1/2 teaspoon fresh ground pepper |

Prepare barbecue grill (medium-high heat) or preheat broiler. Whisk Caesar salad dressing and mustard in a small bowl to blend. Reserve 1/3 cup dressing mixture for salad. Defrost chicken in microwave. Brush chicken with remaining mixture; season with salt and pepper. Grill or broil chicken until cooked through, about 4 minutes per side. Transfer chicken to plate. Toss lettuce in medium bowl with reserved 1/3 cup dressing mixture; divide salad between two plates. Cut apple into small pieces; arrange over lettuce. Cut chicken crosswise into thin slices; arrange over lettuce. Sprinkle salads with cheese, croutons and roasted almonds (optional). Top with fresh ground pepper. |
