Apple-Spinach Salad |

1 cup vegetable oil 1/3 cup cider vinegar 1/3 cup sugar 1 teaspoon celery salt 1/4 teaspoon ground black pepper 1 lb fresh spinach, torn 1 head romaine lettuce, torn 2 Granny Smith Apples, cored and cut into 1-inch pieces 1 (15-oz.) can mandarin oranges, drained 1/2 cup toasted cashews, coarsely chopped 1/4 cup crumbled goat cheese (optional) |

For dressing, in a small bowl whisk together oil, vinegar, sugar, celery salt, and pepper. (Or blend ingredients in a blender.) In a large bowl combine spinach, romaine, apples, oranges and cashews. Toss with dressing, sprinkle with cheese (if desired), and serve. |
