Watermelon & Feta Salad |

4 cups cubed seedless watermelon 2 tablespoons extra virgin olive oil 3 tablespoons fresh lime juice 1 tablespoon red wine vinegar 3/4 cup crumbled feta cheese 1/4 cup coarsely chopped fresh mint, basil or Italian parsley |

Place watermelon cubes in a large bowl; set aside. For dressing, in a small bowl whisk together oil, lime juice and vinegar. Season with salt and freshly ground black pepper to taste. Pour over watermelon. Toss gently to coat. Add feta and mint; toss gently. Serve immediately. |
