Cold Rice Salad |

3 cups basmati rice, cooked and cooled 1/4 cup fresh cilantro, finely chopped 1/2 cup diced celery 1/4 to 1/2 cup pine nuts 1 to 2 tablespoons seasoned rice vinegar, to taste |

Cook the rice, cool and measure out 3 cups. In a mixing bowl, combine the rice, cilantro, celery and pine nuts. Add the seasoned vinegar a tablespoon at a time, tasting until desired flavor is achieved. Serve rice salad with cucumber and tomato slices drizzled with lime juice and a little olive oil. |
