Grilled Peaches & Almond Cookies |

6 peaches (cut in half and remove pit) 1 1/2 pounds fresh strawberries, trimmed and quartered 1 1/2 cups heavy cream, whipped and chilled 1/2 cup packed light brown sugar 1/4 cup unsalted butter 1/4 cup light corn syrup 1/3 cup all-purpose flour 1/2 cup sliced almonds, chopped |

Grill peaches, and then cool to room temperature. Set oven to 350 degrees and grease two sheet pans. Prepare the almond cookie dough -- place brown sugar, butter and corn syrup in a saucepan over moderate heat -- stir until smooth, then add flour and almonds. To bake cookies: place tablespoon of batter 6 inches apart on baking sheet. Bake in middle of oven 6-8 minutes until golden brown and bubbling -- allow to cool 1-2 minutes prior to handling. Should make 18 cookies. To plate: Place a cookie on desired plate, top with whipped cream, then quartered strawberries, then grilled peach and top with another cookie. |
