Green Bean Salad |

2 (14 1/2-oz.) cans French style green beans, drained 1/2 cup finely chopped red bell pepper 3 tablespoons chopped fresh mint 1/3 cup extra virgin olive oil 1/4 cup red wine vinegar 2 garlic cloves, thinly sliced 1 tablespoons chopped fresh oregano or 1 teaspoon dried oregano |

In medium bowl toss together beans, bell pepper and mint. In small bowl whisk together olive oil, vinegar, garlic and oregano. Pour over bean mixture. Toss to coat. Cover and refrigerate at least 2 hours. Season with salt and pepper to taste. |
