Red, White & Green Turkey Burgers |

1 lb ground turkey 2 cups fresh spinach, torn into pieces 1 clove garlic, minced Pinch of ground nutmeg 2 teaspoon olive oil 1 roasted red pepper, chopped 3 to 4 oz soft goat cheese, broken into small pieces 1 egg ½ teaspoon ground black pepper ½ teaspoon salt ¼ teaspoon ground red pepper 4 sourdough rolls, cut in half. |

Preheat a grill pan (or grill if cooking outside) to medium heat. In a skillet over medium heat, add the olive oil, add the garlic and cook for about 1 minute until fragrant then add the spinach and nutmeg. Cook until wilted. Remove pan from heat to cool. In a large bowl combine the turkey, cooled spinach mixture, roasted red pepper, egg, and spices. Mix just until combined, be careful not to over mix. Add goat cheese and mix just until incorporated (if you like extra goat cheese aim for 4 oz, if less go for 3 oz). Divide the mixture into four then form into 1” thick patties. Place on preheated grill pan and cook for about 7 minutes per side until cooked through. Remove to plate to rest. Toast rolls on hot grill if desired. Place burgers on the rolls and top with your favorite condiments. Suggestions: extra fresh spinach, Dijon mustard, garlic-mayonnaise, red pepper aioli, or steak sauce. |
