Peach & Pecan Pie |

4 cups peeled & sliced ripe peaches 1/4 cup all purpose flour 1/2 cup light brown sugar Zest of 1 lemon 1 recipe pie crust for 2 crust pie 4 tablespoons toasted finely chopped pecans 2 teaspoons skim milk |

Preheat oven to 425 degrees F. Toss peaches in bowl with flour, sugar, and lemon juice. Let stand. Prepare pie crust. Roll out bottom crust and press in half of the chopped pecans. Place in pie plate. Add peaches, mounding them toward center of pie. Roll out second crust, and press in remaining chopped pecans. Place over pie. Crimp edges together. Slash top in a few places. Brush top crust with milk. Bake for 1 hour or until golden brown. |
