Baby Greens Salad With Sherry Wine Vinaigrette

Ingredients:
2 cups (loosely packed) of mixed baby greens per person.
Include: baby romaine lettuces, baby red and green lettuces and baby spinach leaves. Add Arugula for color and texture.

Sherry Wine Vinaigrette
1 cup olive oil
1/4 cup red wine vinegar
2 tablespoons sherry
1 tablespoons lemon juice
pinch sugar
pinch salt
pinch freshly cracked black pepper

Preparation:
If the dressing is too strong, add several teaspoons of cold water to cut it.

Mix all the ingredients well. Dress the baby greens just before serving.
