Chilled Minted Melon Soup |

1 cup water 6 tablespoons honey 2 tablespoons coarsely chopped mint leaves, more for garnish 1 medium honeydew melon (about 3 pounds), cut into 1-inch pieces 1/4 cup lime juice 1 cup low-fat milk |

Heat water, honey and mint to boiling; remove from heat. Let stand for 5 minutes. Pour mixture into a blender or food processor; add melon and lime juice. Cover and blend until smooth. Pour into a medium bowl or pitcher; stir in milk. Cover and refrigerate about 3 hours or until chilled. Garnish with additional mint leaves if desired. For a creamy, dreamy dessert, simply substitute ice cream for the milk. |
