| A totally easy, hearty soup that works great in the crock pot. It tastes better the next day, and freezes really well. My dog tells me it gives me gas, but I disagree. | ||||||||||||||||||||||||||||||
| Ingredients: | ||||||||||||||||||||||||||||||
| 1 pound(s) dried split peas, rinsed 2-3 carrots, sliced 1 large chopped onion 3 stalks chopped celery (with leaves) 2 cloves of garlic 1 1/2 quart(s) combined liquids (chicken stock, white wine, water, vegetable broth) 1-2 smoked ham hocks or a quarter cup of chopped ham (optional) Salt to taste (add at the end because the ham can add saltiness) Black Pepper to taste Optional Garnishes: Croutons or Chopped Fresh Parsley | ||||||||||||||||||||||||||||||
| Preparation: | ||||||||||||||||||||||||||||||
| Put all ingredients into the crock pot, making sure that the ham hocks are covered with liquid. Put the cover on and cook on LOW for 8 to 10 hours, until peas are soft. After cooking, skim excess fat from the surface of the soup and discard. Remove ham hocks to a plate. After they cool, pick the tender meat off the hocks, discarding the rest. Return the selected meat to the crock pot and stir. Add salt to and pepper to taste. If you like, garnish with croutons or chopped parsley. | ||||||||||||||||||||||||||||||
