1 very ripe Banana 1 medium egg 1/2 cup milk 1/2 cup sugar 1 teaspoon vanilla extract 1 cup flour 1 teaspoon baking powder 1/2 teaspoon fresh grated nutmeg 1/2 teaspoon ground cinnamon oil for frying |

In a medium bowl mash banana with a fork. Add egg, milk, sugar, and vanilla extract. Mix lightly. Add baking powder, cinnamon, and nutmeg to flour and mix together. Add flour mixture to banana mixture and lightly mix together until a dropping batter is formed. Heat oil in a frying pan until hot. Add batter using a spoon forming small pancakes circles and fry on both sides until golden. Remove from pan and set on paper towels to drain. Serve warm. |
