What’s the secret to poached eggs, and don't give me vinegar.

it's simplicity. My grandfather taught me and it works perfectly every time. Crack the egg(s) into water that is just starting to boil and leave them in for a short time -- a few minutes only. Then scoop out with slotted spoon. If serving on toast, let the slotted spoon with egg rest on a paper towel briefly to soak up water before placing on toast. (And definitely DON'T use vinegar.)

For me it's all about the flow of the water you are poaching the egg in. Make sure to use a spoon to produce a swirl in the water ad place the egg (using a cup) in the center of the swirl. Continue swirling the water as the egg cooks. Oh yeah...and the vinegar!
