1 kilogram(s) Chicken (2.2 lb) 2 bulbs Garlic chopped 3 Bay Leaves 1 1/2 cup(s) of water 4 tablespoon(s) of Soy Sauce 2 1/2 tablespoon(s) of Red Cane Vinegar 1 Seasoning package of Ginisa mix or 1 teaspoon of salt if you cant find Ginisa mix or to taste Black Pepper to taste Oil to coat pan |

Put 1 kilo of cut-up chicken in a sealable container. Sprinkle the chopped garlic over it. Add the soy sauce and vinegar. Seal and place inside the refrigerator overnight. Turn the chicken over once before you go to bed.
Place the marinated chicken in a large skillet. Add the water, and the Ginisa mix. If you cant find Ginisa, add 1 teaspoon of salt or to taste. Add the three bay leaves and black pepper to taste. Do not stir. Bring this to a boil.
Once it is boiling, lower the heat and cook for 15 to 20 minutes, or until the chicken is done. Add water if it is needed. You may flip the chicken over once during this time. Then remove the chicken from the pan. Strain the garlic from the pan with a strainer and keep the sauce on the side. Use the same pan. Heat oil to coat pan and saute the garlic in the pan until it is toasted. Put the chicken back in the pan, and fry it until it is golden brown. Place the sauce back in the pan and mix and move it around, and bring it to a boil. When it has come to a boil, youre all done.
