Description:

This delicious appetizer is easy to make and fun to eat. A spiced ground turkey mix is rolled in a soft lettuce leaf to create a light easy to eat wrap.

Ingredients:

2 tablespoons Olive Oil
1 pound Ground Turkey
1 Shallot, minced
3 cloves Garlic, minced
2 tablespoons Ginger, minced
1 red chili, de-seeded and chopped
1 1/2 coleslaw mix- shredded cabbage and carrots
3 shittake mushrooms, sliced
3 Scallions, sliced
2 tablespoons lime juice
2 tablespoons soy sauce
2 tablespoons fish sauce
1 tablespoon oyster sauce

Preparation:

ASSEMBLY
Bibb lettuce leaves
Siracha (spicy sauce)
Mint Leaves
Peanuts (optional)

Heat saute pan over high heat. Add olive oil. Saute shallot, garlic, ginger and chili for 1 minute.
Add the turkey, cook for 2 minutes
Add the cabbage, scallions and mushrooms. Cook for an additional 2 minutes.
Add the peanut sauce. Cook for 1 minute. Put filling into a bowl and serve with lettuce wraps and additional garnishes if desired.
