Orzo with Shrimp & Peas |

1 cup uncooked orzo 8 to 10 cups water salt 4 tablespoons butter 1 clove garlic, finely minced 3 to 4 tablespoons fresh parsley, finely chopped 1/2 cup heavy cream 1/4 cup frozen peas 1/2 pound cooked medium to large shrimp, tails removed (about 10 to 12) about 1/4 cup grated Parmesan or Romano cheese |

Add water to large pot and bring to a boil. Add salt (about 2 tablespoons; your pasta water should be salty like the sea). Add 1 cup uncooked orzo and cook until al dente (about 7 to 9 minutes). Drain and return orzo to pot. Add butter and garlic and allow butter to melt over medium-low heat; stir to incorporate orzo. Add heavy cream, frozen peas and chopped parsley and simmer on low heat, stirring often to incorporate cream. Add grated cheese and the last 5 minutes, incorporate the cooked shrimp. Cover and remove from heat. Let stand covered for about 2 minutes before serving. |
